Sous Chef – Aloft at 500 Pearl: Ellicott Hotels is seeking a highly motivated individual who has an eye for detail to join our team as a Sous Chef. You will play a key role at our Aloft Hotel located at 500 Pearl Buffalo, NY 14202. In this role, you’ll be responsible for supporting our executive chef along with our line cooks, working in a fast-paced, high-volume kitchen. You will be responsible for creating and executing dishes from 3 different a la carte menus. If you are a leader with excellent culinary skills, who can bring in a creative twist to our dishes, then this is the job for you!
- Assist Executive Chef with menu development and costing
- Oversee quality execution of 3 a la carte menus for 4 different revenue generating outlets
- Source and order food
- Maintain proper food cost percentages by managing inventory, preventing overstocking, shortages, and waste
- Ensure food safety standards are consistently met
- Schedule, train, and supervise kitchen staff
- Assist with inventory management and control
- Oversee kitchen operations including plating, timing, and workflow
- Responsible for execution of banquet events and à la carte service
- Step into Executive Chef duties as needed
- Must be available weekends and holidays, flexible schedule.
- 3+ years of experience in high-volume banquet kitchens (preferred)
- Strong creativity to bring into the workplace

Sales Coordinator: Ellicott Hotels is seeking a highly motivated individual to join the sales team at 500 Pearl in an administrative role, coordinating between clients, sales and all other departments in our downtown hotel and conference center.
Responsibilities:
- Prepare proposals, contracts, and essential documents for sales team; help ensure every client interaction is welcoming, responsive, and professional.
- Serve as a key contact for calls and emails—often the first friendly voice our clients and partners hear.
- Manage sales files, databases, and assist with the daily organization of our sales office and shared spaces. Input and manage sales data in Customer Relationship Management (CRM) systems, lead tracker and databases when needed.
- Manage CI/TY and Lightspeed while being the liaison between sales and the front desk for groups with room blocks.
- Get hands-on with Microsoft Office, Teams, and hotel systems like CI/TY, Lightspeed, and Empower (training provided).
- Handle sensitive information with discretion and professionalism.
- Work closely with the Director of Sales, Sales Managers, and cross-functional teams to keep projects on track and communication flowing
- Assist the Wedding Catering Sales Manager with appointment scheduling, lead responses/follow ups, billing, deposits, etc.
- Participate in meetings, shadow other departments, and explore different hospitality functions to help you find your passion—whether that’s sales, operations, event planning, or F&B.
- Pitch in across departments as needed and assist with tasks assigned to you by the Director of Sales & Catering or the Director of Operations—we believe in teamwork and supporting one another.
Requirements:
- Education: High school diploma or equivalent required
- CI/TY experience highly preferred. Lightspeed and/or Empower preferred
- People Skills: Excellent communication, a positive attitude, and a genuine interest in hospitality.
- Experience: Prior experience in hospitality, hotels, customer service, or sales is a plus but not required.
- Tech Savvy: Comfortable with Microsoft Office and Teams; eager to learn new systems.

The desired candidate will have hotel maintenance experience or similar, display a professional disposition, be knowledgeable in mechanical repairs, general painting, plumbing, electrical, hvac knowledge is a plus and have problem solving skills. The ideal candidate will be friendly, trustworthy, a team player and be ready for their next career challenge.
A flexible work schedule is important as hotel maintenance is not always a Monday to Friday 1st shift position and weekends as needed. Being able to problem solve and keep to a preventative maintenance schedule is important to any successful employee.
