Ellicott Development would like to warmly welcome our newest tenant, The Mahony-Fairmont, A Great American Eatery! The restaurant is expected to open on March 14th under Owner and Chef Brian Mahony. Although Chef Mahony lived and learned on the west coast for 13 years at the California Culinary Academy and getting classic training in Southern France, Mahony is Western New York born and raised, living in Williamsville before making his move. Since coming home to Buffalo, Mahony had been Executive Culinary Director at the Salamanca Casino for 8 years leading up to his decision to open his own restaurant.
Now for the answer to the question everyone is asking: what will be on the menu? The Mahony-Fairmont will serve lunch, dinner, specialty menus, and high-end takeout. The menu will feature Asian, Mexican, and Italian foods, and weekly side menus which will have themes correlating with various countries such as France, Italy, and Mexico. To accompany all the delicious food, The Mahony-Fairmont will offer in-house condiments created by Chef Mahony, as well.
Chef Mahony describes his vison for the restaurant as a tribute to American diversity and says the space will have “an Irish/English pub atmosphere with a lot of character, but it will not be dark; it will have a contemporary feel.” The Fairmont itself has an industrial modern design featuring office space, as well as residential apartment units. With the addition of The Mahony-Fairmont, the Fairmont is proudly at full occupancy!
